Having said that I preferred the tortilla without peas, I went and made it with both peas and tomatoes this week, so it’s red as well as yellow and green and brown. And I did it in a smaller pan so that it would be thicker – it only just fitted in the pan.

Next time I’m going to try doing it in a smaller pan too so that it comes out thicker. The problem is fitting all the potatoes into the pan in the beginning in order to fry them. I could always use a big pan to fry the potatoes and then a smaller one to do the actual tortilla, but that seems wrong somehow.
