The crackling wasn’t brilliant on this either Lizzie, it had to go back in which feels a bit like cheating.

It’s a good combination Niamh, works just as well on pork chops too (obviously, really!)

Yum. Isn't pork belly the best? I cooked it again last night, but the crackling didn't puff up and out as well as the one I blogged, I think because it wasn't sitting flat under the grill. Still delicious though. Lizzie’s last blog post..Indian-Spiced Lamb Chops
