It doesn’t necessarily need to be an expensive one. It can be pork or duck, but it gives a smooth texture to the canelloni and a special flavour. Ow! and you can also add a tiny piece of truffle (tuber indicum) though this is expensive! This is the recipe I learnt from my granny. They are delicious!

But it was worth it and really tasty. The only thing that I altered was that I cooked the ragu in a low oven,stirring every half an hour. My stove top is to fierce even with a diffuser.
