I can’t remember where we bought it, but it was a long time ago and there was just a drop left in the bottle so we used it up. Recipes that call for it often suggest dry sherry as an alternative if you can’t find it.

Yep, they were from Waitrose. I would normally use the shelled type for this kind of dish I think. Must have been in a bit of a daze when I got to the shop!

It’s Chinese cooking wine. You can find it at Chinese supermarkets and I think some of the regular supermarkets carry it too. You could easily leave it out though, it would give a lighter taste to the dish I think but it would still be good.

Kerri bought them and I’m pretty sure from what I remember of the label on the bag that they were indeed from Waitrose. Although they weren’t entirely non-gigantic. Probably the largest prawns that I remember cooking at home for some time, hence we had just three each.

We share your frustration about non-availability of raw shell-on prawns. I can only assume that the majority of prawn-shoppers want convenience rather than taste, which is sad. Maybe we should get everyone to start asking for them.
