Crumpets
For breakfast this morning, we had crumpets with bacon and cheese followed by crumpets with honey. Yum. This picture doesn’t really do it justice though, I had the settings wrong.

For breakfast, I made heart shaped cranberry and orange muffins.

Homemade muffins served with butter and cheese (for Fred).
2 eggs
1/3 cup oil
1 1/2 cups brown sugar
2 cups bran
2 cups milk
2 1/2 cups flour
Pinch salt
2 teaspoons vanilla
2 1/2 teaspoons bos
1 cup fruit
Beat eggs, oil and sugar together.
Add dry ingredients alternately with milk.
Bake in greased tins at 200c for 15 minutes.

Battle Of The Baking Trays
Since we began making muffins, we’ve been using small, fairy cake trays. They work ok but not brilliantly. Last week, my mum bought us a silicone muffin tray and a friend bought us a heavy, metal muffin tray.

I made bran and raisin muffins for breakfast on new year’s day. The recipe, given to me by Fred’s mum, said two and a half cups of sugar which sounded a lot so I left some out. The result? Needed more sugar. And maybe some cinnamon.

Fried Egg with Bubble and Squeak
For breakfast this morning, Fred had a fried egg with the leftover mashed potatoes and curly kale from last night. He fried the mashed potatoes, so they were a sort of bubble and squeak.
