Stephen cooked this last night to our usual recipe (although he forgot the tomatoes) which meant that all we had to do tonight was reheat it and add some vegetables. The lack of tomatoes gave the casserole a really deep, meaty flavour which was lovely. The chestnut mushrooms really stood out flavour-wise and added to the deep flavour.

i’d have had to have a much bigger portion than that! I’ve got some shin of beef in the freezer, I think it’ll have to be stew this weekend….
We had seconds L! I’ve never cooked shin of beef before but have seen lots of stew and casserole recipes recently, we should try that cut next time. Hope yours turns out well.
Just something I’ve remembered – the beef had turned very tender in this casserole and it reminded me of a particularly nice pie filling. Next time we fancy making a pie, we should make the filling using this recipe.
