While we didn’t have the camera, we made chicken fajitas which turned out rather well. The chicken in particular was really good, and we were wondering what else we could do with chicken cooked in that way.
Tonight we made salad, and decided that fajita-style chicken would go well with it. We sliced two chicken breasts into strips and marinated them briefly in lime juice, fresh chilli, chilli powder, ground cumin, salt and pepper and then stir fried. We fried them until they were just catching on the outside but weren’t dried out, then added to the salad and ate with pita bread.
You forgot to mention the CINAMMON. Wasn’t there quite a lot of CINAMMON in there Stephen?!
Hmm yes, there was some cinnamon. Which ended up all over the kitchen due to an accident. Oops.
That’s a great idea to put it in a salad. We always have chicken fajitas with tortilla wraps. This will make a nice change.
Good to have you and your camera back! Looks very good – not thought of putting in salad before either. Good idea. Would make a nice lunchbox for work too.
Oooh I like this, defo one for the lunchbox esp after beetroot and fennel seem to have been replaced by vast quantities of lettuce in the veg box
