Kerri was planning to make rosti this evening, however in attempting to parboil the potatoes first, she encountered the same sort of problems as we’d encountered in our previous rosti disaster. So she made mackerel fish cakes instead, which were rather good. Served with a mixed salad with a mustard and lemon dressing. The dressing went well on the fish cakes too (not sure if Kerri noticed me doing that or not…)
Those fish cakes look fantastic – I love, love, love smoked mackerel fish cakes! And what a great photo – how did you manage that at this time of year?!
By the way – when I make rosti, I don’t bother to parboil the potato before grating. It seems to work fine as long as you squeeze as much of the water out of the potato first using a clean tea-towel.
I have some smoked salmon about to turn — holy, I should make fish cakes now. Yours look awesome. I love smoked mackerel.
