Stephen made this at the weekend and has been eating it for lunches during the week. There are lots of different recipes for tortilla and many variations on the fillings but the method remains fairly constant:
Finely slice potatoes and onions, fry slowly in olive oil
Mix together five eggs, season, add to potato and onion mixture
Fry for 15 minutes on low heat, then flip and fry for a further 5 minutes
This time we added peas but tomatoes have made an appearance in the past too.
I’d decided to put in peas this time for a little variety, but wasn’t convinced by it as it tended to dilute the general tortilla-ishness of it. Next time I’m going to try doing it in a smaller pan too so that it comes out thicker. The problem is fitting all the potatoes into the pan in the beginning in order to fry them. I could always use a big pan to fry the potatoes and then a smaller one to do the actual tortilla, but that seems wrong somehow.
The different layers and colours look great.
Thanks Lizzie. Having said that I preferred the tortilla without peas, I went and made it with both peas and tomatoes this week, so it’s red as well as yellow and green and brown. And I did it in a smaller pan so that it would be thicker – it only just fitted in the pan.
What kind of pan did you use? Do you need a teflon-one for this?
