Dulce de Leche Brownies

Posted By Kerri

After Tuesday night’s pancakes, we were left with rather a lot of leftover Dulce de Leche. As nice as it is to eat straight from the fridge with a spoon, we both felt it deserved a more fitting end so we decided to use it to make chocolate brownies. I first came across this recipe last summer when we had our Mexican barbecue and it’s been filed away in the dessert category of my head ever since.

It was a very easy recipe to follow and the results were good: crunchy outsides with a dense, sticky middle which was intensified by the sticky, caramel like texture of the Dulce de Leche. Just as brownies should be.

These brownies look amazing! Far better than the Boots brownie I’ve just eaten.

I usually make brownies with nuts but these look like they don’t need that additional crunch. Such an amazing picture – i’m definitely going to try adding some Dulche de Leche.

One of the boys in my cookery club used dulce du leche in his banoffee pie. Obviously it only required a little so the rest of us did eat it out of the tin with a spoon. I’ll keep this in mind for the next time we have an excess.

Thanks, when I posted originally we hadn’t actually eaten a whole one. Although a little overcooked, they were still moist and fudgey. The caramel helped with the stickyness but went wonderfully crunchy on top. Better on the second day too.

I made dulce de leche brownies but they didn’t come out as lovely as yours. I think I might have over cooked them a tad and it didn’t help that I didn’t add all the dulce de leche. I guess I need to try again using this recipe.
