Barbecue Pizza Second Attempt

After last week’s barbecue pizza attempt which was really tastybut not perfect, we decided to try again to see if we could perfect it. We wanted the fire hotter this time, to try to get it to cook more quickly and blister the edges of the base a bit. The fire was hotter, but still not quite hot enough – we’re still sticking to general barbecue principles and letting the coals burn down before cooking on them, but I think we should put the pizza on a lot earlier than would be sensible for a normal barbecue. That said, it was still tasty and we devoured it happily. Pity the white balance on the picture isn’t great.

  1. That looks ever so tasty. We had pizza last week, and still I’m drooling, like I haven’t had any in ages 🙂 Very intriguing the barbecue baking. I’m so envious you have a baking stone. I wonder if you could speed things up if you also put a lid that has been pre-heated with the stone. I know people use it for bread baking in regular ovens and it can be something simple and cheap like a clay pot upside-down. You need to plug the drainage hole though, perhaps by putting in a metal handle there.
No, have to move away from the picture or I’ll start licking the screen.

    How brilliant!

Do you heat the stone in the oven first?

James, we heated the stone on the barbecue itself for a while before putting the pizza onto it. Doing it in the oven might be a good option though since we’re looking for ways to keep the heat inside the barbecue better and opening it less would help that.

Go on. Give in. Build a pizza oven! I’m lobbying Cowie to build one in London.

Caramella – the stone was very cheap, about £7 from Fenwick I think. Definitely worth it.

If we owned our flat then a pizza oven would be top of the list, Jonathan! If you get round Cowie then I’m sure you’ll have a lot of visitors 🙂

  6. Oooh, thanks, I’ll check it out as soon as I can, I’ve been hankering for a baking stone for ages.

Looks great. I did think about using the barbecue for my pizza attempt but was wondering if it would get hot enough. I think the only answer is to build a dedicated outdoor oven!
