Roast Lamb

Today we decided on roast lamb for dinner. We didn’t have any anchovies and neither did any of our local shops so we bought some anchovy paste as an alternative and mixed it with rosemary and garlic before spreading on top of the lamb. It worked brilliantly and resulted in tender, tasty lamb.

We also had roast potatoes, roast parsnips, brussels sprouts, purple sprouting broccoli and peas. And gravy. Lots and lots of lovely gravy.

We have Christmas pudding and brandy butter to come too. What was that I said about salad earlier in the week?!

    Save the salad till next week! Lamb looks great, never tried it with anchovies/nor anchovy paste before.

    Thanks everyone, I think it’s the best roast lamb we’ve done. Normally we make slits in the flesh and stuff with garlic slivers and anchovies but this was a great alternative; easier too!

    The Christmas pudding was great too, it was one from last year so it was really moist. If I could be bothered I’d make one now for next year!

    You’re right about the salad Pixie, wise words!

    In a mortar and pestle, we pounded up two garlic cloves along with the leaves of two sprigs of rosemary until we had a paste. Then we added one to two teaspoons (I can’t remember exactly) of anchovy paste to this and mixed it all up. We did have some slits in the flesh and pushed a bit of the paste into these as well as covering the outside of the lamb with it.

    looks delious Can i use rosemary herbs or do i need to use spriggs of rosemary ? i have never usedgarlic with roastlamb but definely will try now
