Spaghetti alla Vodka with Crayfish

Posted By Stephen

A quick dinner this evening based on our recent success with spaghetti alla vodka. At the time, Kerri had commented that it would be good with things added into it and this evening those things were little crayfish tails.

We followed the recipe pretty much exactly as it is in the link above, except that we added the (pre-cooked) crayfish tails at the same time as the vodka and cream. And we didn’t have parsley, which was unfortunate. I didn’t think that the sauce had quite the same intensity as last time, but I do have a nasty cold at the moment and that probably dulled my senses – Kerri assured me that it was indeed very good.

You have reminded me that the Troudadour used to do a splendid penne with vodak (I think it had salmon too?), I have just checked their website and it seems to have gone – maybe it appears still on their specials?

    Yours looks lovely!

I like cooking with Vodka. Sometimes I even add it to the food.

This (tomato version) is a frequent standby for me on those long nights in the kitchen. Never thought of adding alcohol though. Or crayfish – keep meaning to pick some up.

  4. Can you taste the vodka? I have seen a few recipes using it but I am not sure what it adds besides a certain sharpness?

GC, it adds a background richness and depth I think. A bit like adding brandy to a sauce or to French onion soup does. Most of the alcohol cooks away, so you don’t get harshness from it.

Wow! Found this recipe (and your wonderful blog) via a Google search for spaghetti alla vodka. The addition of the crayfish was inspired and really transformed the dish. My husband has made me add this to my ‘must make again’ list. Thank you!

I think we should cook it again soon too, it has been a while.
