Rice Pudding

I made a rice pudding yesterday and almost burnt my mouth in my hurry to taste it as soon as it came out of the oven. Although it was hot, it wasn’t long before I realised I’d forgotten to add the sugar. I managed to rescue it today though by re-heating some with some extra milk and a sprinkling of sugar. It was perfect, rich and creamy with a lovely nutmeggy ‘skin’.

    It’s my mum’s recipe, 50g pudding rice, half a pint of milk and loads of nutmeg stirred into the mixture. And sugar, obviously!

    Her top tip is to soak the rice in milk all day, throw the milk away and then use fresh milk for cooking.

    Make sure the dish is greased with butter and add some extra butter to the top so you get a good skin.

    I haven’t had rice pudding for ages – I love it. So delicious. We always used to fight over the skin at home. And always topped each serving with a teaspoon of strawberry jam. Delicious!
