Baked Mackerel and Poor Man’s Potatoes

Fred -

Yesterday we bought some whole mackerel and planned to do something interesting with it this evening. We have loads of thyme growing in our garden so we thought we’d use up some of that and Ginger found a really good sounding recipe. However, when we got home and started making it, we found [...]

Thai Monday: Lemongrass Beef and Tom Yum Goong

Ginger -

As it was a Bank Holiday today and we had plenty of time, we decided to cook some Thai dishes. We’ve done the lemongrass beef several times before and it’s one of our favourites. To go with it we decided on Tom Yum Goong.
Both dishes are quick to prepare which makes a refreshing [...]

Smoked Mackerel Risotto

Ginger -

I picked this up last weekend intending to use it in salads for lunch throughout the week, that didn’t happen though so it was left lurking in the fridge. Since making stock last weekend, I’ve had a risotto craving so I thought I would use the mackerel up tonight and satisfy my craving at [...]

Party

Ginger -

You’d be forgiven for thinking that things have been a bit quiet around here lately. Both Fred and I were out on Thursday and regrettably there was no food involved, only wine. And mojitos. For that reason, Friday saw us give in to the temptation of the supermarket pizza. As you [...]

Smoked Salmon Fishcakes and Salad

Ginger -

This evening we had some fish cakes that we’d made previously and frozen. They were very good - the fish was hot-smoked salmon and the potatoes had been baked in the oven. The smoked salmon gave the fish cakes a wonderful flavour; sometimes poached fish gets lots amongst the potatoes.

My Favourite Sandwich

Ginger -

Thai Monday Part 6 - Spicy Minced Chicken Salad (Larp Gai)…

Fred -

…and hot and sour soup of clams with chillies and lime (tom yam hoi nahm sai).
It’s been a while since we’ve done our supposedly weekly Thai Monday, so over the weekend we hastily chose a couple of recipes and bought what we needed to.
First up was Hot and Sour Soup of Clams with Chillies and [...]

Spanish Seafood Stew

Fred -

We decided on something of a Spanish theme this weekend and chose a recipe from one of each of the Spanish cookbooks that we have; this one is from “The Food of Northern Spain”. We’ve cooked something similar before and thought we’d give it another go.
This version contained mussels, and since we could only [...]

Sushi

Fred -

A short while ago we decided to make sushi and invited some friends around for the evening. We started planning a few extra things to make apart from the sushi itself, but soon we ended up with loads of extra things with the sushi almost taking a back seat, but not quite.
We started preparing [...]
