Salad

Kerri -

Tonight we had salad. It wasn’t worthy of a picture. If we go quiet for a while you’ll know it’s because we’re eating salad. See you soon 🙂

Boxing Day Bubble and Squeak

Kerri -

Unsurprisingly, we had a huge amount of leftover food on Boxing Day. This pleased me though because as much as I love Christmas lunch, I also love, love, love leftovers. Particularly leftovers that can be turned into Bubble and Squeak. Luckily I’m not alone, my family agree (my mum says it was always an easy […]

Christmas Lunch

Kerri -

We spent Christmas with my mum and cooked lunch for the three of us there. As there was only the three of us we had chicken instead of turkey which we prefer anyway. The chicken was cooked in our usual way, rubbed with oil and salt and pepper and stuffed with herbs, lemon, onion and […]

Chicken and Roasted Vegetables

Kerri -

Stephen bought some chicken legs and thighs for a casserole a couple of weeks ago but we didn’t get round to making it so froze them. The chops were rubbed with our usual garlic, rosemary and bay mix before being expertly fried by Stephen. The peppers […]

Tomato and Basil Soup

Kerri -

We had some leftover tomatoes languishing in the bottom of the fridge so I turned them into soup for lunches next week. Roast some tomatoes, red peppers, red onions and garlic in the oven for about 40 minutes. Add some vegetable stock and basil. Blitz until smoothish. Eat 🙂

Fishcakes with Lemony Leeks

Stephen -

We’ve had these in the freezer for a while and thought they would be nice and easy for a Friday night. And they were except I left them in the oven a little too long. We served them with lemony leeks which were a good contrast: leeks braised in some chicken stock and lemon juice, […]

Stuffed Lamb

Kerri -

I was out after work this evening so Stephen was in charge of dinner. I got home to the smell of something sweet and roasty which turned out to be roasted sweet potato. This was the accompaniment to some brilliant stuffed lamb fillets which he served with roasted red pepper and, of course, the sweet […]
