Happy Pancake Day!
Wow, two food festivals in one week! Tonight, we made pancakes. Stephen had a variety, one with leftover meatballs, one with lemon and sugar and this one, that I made for him. Chocolate spread with raspberries. I thought of it too late though so the raspberries were still frozen. This would have been ok if […]

This started off in our heads as a casserole but, somewhere along the line, became a pie, and a tasty pie at that. We started off by browning the chicken and removing it from the pan, next we softened some onion, garlic, celery and carrot. Then we threw in the mushrooms (chestnut, white and another […]

Mmmmm cottage pie. Kerri assembled this yesterday and we baked it tonight. It was made with really good mince from our butcher, which had a wonderful texture and taste. We had it with some vegetables – brussels sprouts, carrots and peas. Also some gravy that I’d made which wasn’t that great – luckily we didn’t […]

I got home from work (and pub) a bit late today and Kerri had cooked some venison and red wine sausages. She had also made bubble and squeak. The aroma when I arrived home was really brilliant. The sausages were tasty but had dried out a little; maybe they would be good in sausage casserole? […]

One of my food-related new year’s resolutions was to perfect the sausage casserole. This was my first attempt and is a long way off what I was hoping for. This method requires you to fry the sausages and shallots, then add garlic and bacon and fry a little more, then add stock, wine, mustard and […]

This was from Delia’s Winter, Stephen has been super-keen to make it all week so, on Wednesday night we cooked it ready for last night’s dinner. The flavours were good, but the meat was quite dry. The sauce is thickened with creme fraiche which I don’t think worked very well. It needed to be thicker.

Contining our quest to cook the perfect pork chops and to eat healthily, we chose pork chops for dinner this evening. We did them with the same rub we used last time: garlic, salt, rosemary and bay. We pan fried them slowly as they were really big and served them with mashed sweet potato, green […]
